“Chocolate is incredibly powerful,” Lauren Gockley, Coda Signature’s head chocolatier believes.  “Not only does it have a rich history steeped in wealth, divinity, and love, it is also considered one of the most powerfully nutritious foods on the planet. “ But what she finds most intoxicating about chocolate is its connection to memories. “With each taste, we create a database of flavors that connects us to moments in our lives and to each other.” Lauren treasures her role in providing those experiences.

Lauren Gockley completed her studies at l’Ecole du Grand Chocolat in Tain l’Hermitage, home of the Valrhona Chocolate Company. After graduating at 24, she worked in a series of Parisian pastry shops before returning to the States where she quickly found a place at Thomas Keller’s Per Se in New York. She spent over four years working as a raw and vegan chocolatier. After 10 years of working with chocolate, she was named one of Dessert Professional’s Top 10 Chocolatiers in North America.
